It's summer here and it's fig time in malta. After work I go for a walk in the countryside and as fig trees grow on the walkways, I help myself to this wonderfull fruit.
This is one of my favourite summer salads and it's very easy and simple.
Ingredients:
A dozen figs peeled (if you don't like it)
Two handfulls of rucola.
2 tablespoons shaved Parmesan
Some pine nuts
2 tablespoons Balsamic vinegar
1 tablespoon olive oil
1 teaspoon chopped garlic
1 tablespoon honey
Salt
Pepper
Method:
Put the balsamic vinegar, olive oil, garlic, honey, salt and pepper in a bowl and whisk.
Add the figs and rucola and toss.
Mix in the Parmesan and the pine nuts before serving.
Enjoy.
