With all the pumpkin carving happening at home, I ended up with loads of fresh pumpkin.
This soup is simple, creamy and delicious...
Ingredients:
Onion
Butter
Pumpkin flesh roughly cut
Vegetable stock
1 teaspoon pumpkin pie spice
salt and pepper
1 cup of cream (optional)
Method:
In a medium pan, melt the butter and sautee the chopped onion till translucent.
Add the chopped pumpkin flesh and spice, salt and pepper.
Stir and keep cooking stirring occasionally so that the pumpkin doesn't stick for about 8min.
Add enough vegetable stock to cover all the pumpkin and simmer for 30min.
Remove from heat and blend with a stick blender or liquidiser.
Place on low heat and if using, stir in the cream.
Keep stirring for a couple of minutes until the soup has thickened and it's ready to serve.
