Parma ham and mozzarella salad with basil fig balsamic vinegrette


Another wonderful light salad for summer.

For the salad:
Salad mix i use the prepared salad mix with lettuce, rucola and baby leaf
5 cherry tomatoes cut in half
5 small mozzarella balls
3 slices parma ham rolled and cut in half
some grana padana shavings

For the Vinegrette:
1 handful of basil leaves
3 fresh figs
2 teaspoons chopped garlic
2 small chili peppers or less depending on taste
2 spoons balsamic vinegar
3 spoons olive oil
salt and pepper to taste

place all the ingredients of the vinegrette in the container of your blender and blend untill smooth... you may add more oil depending on your preferred consistency.

I serve my vinegrette on a side small bowl, but you may toss it with the salad before adding the rest of the ingredients. enjoy
